I just tried this recipe this past Sunday! All I have to say...is yummy and I will be making them more often.
I topped them off w/ s.f. strawberry jam and a few nuts

Oatmeal Pancakes (Healthy Alternative to Pancakes)Ingredients
1/2 cup of old fashioned oatmeal
1/4 cup of low fat cottage cheese
1/4 cup of splenda (optional)
4 egg whites
1-teaspoon vanilla extract
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
Directions
Process the oatmeal, cottage cheese, egg whites, vanilla extract, splenda, cinnamon & nutmeg in a blender until smooth. Spray a nonstick griddle or skillet with cooking spray. Add the batter & cook over a medium heat until both sides are lightly browned.
Approx makes 4 med size pancakes ~ 360 calories for the total recipe!
